100% Chardonnay grapes, grown on the “Valletta” farm in the Rivetti area.
Yield:
55 - 65 hl/hectare.
Vinification:
Natural racking of the must for about 8 - 10 hours. Fermentation in new barriques at a temperature of 18/20°C.
Maturing:
on fine lees for 18/20 months in new barriques and in the bottle for 8/10 months.
Organoleptic Examination.
Serving Temperature: 10/12° C.
Colour: golden yellow with greenish hues.
Perfume: fruity and floral with characteristic vanilla notes.
Flavour: pervasive and fruity in the mouth, persistent with a particular spicy note.
Serving Suggestions: excellent as an aperitif and served with cold game, foie gras, white meats and large grilled fish.
